What is water bath canning?

Water bath canning is a method used to prevent food spoilage. Nicolas Appert was a Frenchman and was known as the "father of canning". He discovered that if he sealed a glass jar with cork and wax then heated it the food wont spoil.  Water bathing is around 200 years old.

By processing them in boiling water it destroys mold spores, yeast, and bacteria, and creates a vacuum seal that prevents spoilage. 

There are some important things to remember when you are water bath canning like not all foods can be preserved using the water bath method. Only high acid foods can be safely processed.
